Kubel's

At the northern tip of Long Beach Island, where the bay meets the ocean and the road runs out, a family tavern has been feeding beach towns for the better part of a century. Kubel's sits on quiet streets in Barnegat Light, a few minutes from the lighthouse, and it is the kind of Jersey Shore institution that locals guard and summer visitors stumble onto: wood, screens, cold beer, and a menu that has almost nothing to do with fashion and everything to do with what comes out of the water.

Clams are the reason to come. The bay is right there, and the kitchen treats it accordingly: fried clam strips in a light, craggy batter; a chowder thick with potato and pork; and the simplest and best of the lot, clams steamed and served with a cup of drawn butter and a bowl for the shells. Order the platter if you are hungry, or a couple of dozen steamers and a beer if you are not, and let the work of shelling them set the pace of the evening. It is not delicate food and it is not trying to be — it is shore food, meant to be eaten with your hands, with salt still in the air.

Come in the late afternoon, after the beach, and expect to wait at the height of summer, when the island fills up and every table is spoken for. This is not the polished end of the Shore; it is the working end, and that is the point.

Anthony Bourdain came through for Parts Unknown in search of the real New Jersey, and Kubel's is exactly what he was after: a place that has fed generations of the same families and sees no reason to change, because it has already got it right.
