Out on the highway that runs the length of the Mojave, past the turn-offs for the park, sits a diner that does not look like much and does two things at once. JT Country Kitchen, on Twentynine Palms Highway in Joshua Tree, has been a roadside stop for the high desert for decades, and its menu carries both halves of that story: the classic American egg breakfast, and, on the same pages, a set of Cambodian dishes that tell you who is doing the cooking.
Start with breakfast, because that is what the griddle is for. Hash browns crisped on the flat-top, eggs fried until the yolks run, thick toast, and a plate of steak and eggs for anyone with a day of hiking ahead. The bacon is not the point so much as the timing — everything lands hot and at once, the way a proper diner does it, and the coffee keeps coming. Then order something from the Khmer side of the kitchen: a bowl of noodle soup or a rice plate seasoned with the lemongrass, lime and fish sauce of Southeast Asia, and a reminder that the desert has been welcoming newcomers for a very long time.
It is a small room with tables and a few booths, family-run in the easy way that only comes from feeding the same neighbours for years. Come before a day in the park, or on the way back when you are dusty and hungry and do not want to drive any further than you have to.
Bourdain took No Reservations through the high desert and found the kind of place he was always looking for in America: unglamorous, mixed, generous, and cooking two traditions side by side without making a fuss about either of them.
