Gordon Ramsay Hell's Kitchen

On the Las Vegas Strip, in front of Caesars Palace, the two kitchens of a television set have been rebuilt as a restaurant you can actually book. Gordon Ramsay Hell's Kitchen opened in 2018, taking the red-and-blue format of the show and turning it into a room with an open kitchen down the middle, a bar pouring the series' cocktails, and a dining room that runs at resort volume from lunch until late. It is unabashedly a production. It is also, by Strip standards, a serious kitchen.

The menu is the show's greatest hits, and that is exactly the draw. Beef Wellington is the centrepiece — a fillet wrapped in mushroom duxelles, prosciutto and puff pastry, baked until the pastry is golden and the beef still blushing — the plate the whole series was built around judging. Around it sit pan-seared scallops with cauliflower purée and a caper-raisin emulsion, a crisp-skinned salmon, and a short rib that gives way under a fork. The sticky toffee pudding, dark and date-sweet beneath a hot caramel sauce, is the dessert the show made famous and the one most tables order without debating it.

Reservations matter here more than almost anywhere else on this map. The room is large, but the Strip is larger, and prime dinner slots go days ahead. Lunch is the easier and cheaper way in, and the bar takes walk-ins. Prices are what a celebrity restaurant on this boulevard implies; the set menus are the sensible option. If you are driving, valet at Caesars spares you the walk, which is longer than the map makes it look.

The point of the place is the translation. Hell's Kitchen was built as a competition, but its food was always real, and this restaurant puts that food in front of people who never had to fight for it. Order the Wellington, order the pudding, and the television version and the dinner version sit close enough together that the difference stops mattering.
