Houston's Vietnamese cooks took the Louisiana crawfish boil and made it their own, and David Chang spent an episode of Ugly Delicious arguing about it. The series follows the boil from the bayous into a city with one of the largest Vietnamese communities in the United States, and it lands in the Bellaire Boulevard corridor, where the pots are seasoned with lemongrass as readily as with cayenne. The fusion has a name now — Viet-Cajun — and Houston is where it took hold.
The format is Louisiana's: a big pot, a heavy hand with spice, crawfish sold by the pound. The difference is what goes in alongside the cayenne — lemongrass, ginger, garlic and citrus — and what happens at the end, when the cooked crawfish are tossed through a garlic-butter sauce that clings to every shell. You eat with your hands, and the shells matter as much as the tails: the fat in the head is where the seasoning has been working hardest. Cajun fries and a cold beer are not extras; they are part of the ritual.
Crawfish is seasonal, so this is a late-winter-to-summer obsession in Houston, and the size of the crop sets the price from week to week. Order by the pound, and order more than you think you need, because much of the weight ends up on the table rather than in you. Ask for a spice level you can actually finish, and keep the napkins within reach: this is not a meal that rewards a white shirt.
Chang's larger point across Ugly Delicious is that cuisine is what happens when people move, and that the most interesting cooking in a city is often done by cooks nobody is writing about. That thesis is easy to state and hard to prove. A table covered in shells, a plastic glove on each hand and a bowl of garlic butter going cold beside you is the proof, and it is on Bellaire Boulevard, in the corridor where the city's Vietnamese kitchens cluster.
